Fairmental Lab & Deli is a Dublin-based fermentation studio founded by chef Val and psychotherapist Mihaela Ivancenco.

We specialise in traditional lactofermentation and focus on using high-quality Irish ingredients.

At Fairmental, we teach people how to ferment and to use fermentation in everyday cooking. Through workshops, talks and immersive experiences, we empower people to incorporate fermented foods into daily meals in simple, accessible ways.

Our work bridges culinary tradition and science, connecting fermentation to gut health, mood and the gut-brain axis. We believe fermented foods are a powerful, practical tool for long-term wellbeing.
